About This Homemade Egg Noodles Recipe

200g Noodles
2 Eggs
1 Small Carrot, Julienned
1 Small Capsicum, Sliced
1 Small Onion, Sliced
2 Garlic Cloves, Chopped
2 Tablespoons Soy Sauce
1 Tablespoon Chili Sauce
1 Tablespoon Tomato Ketchup
Salt, to taste
Black Pepper, to taste
2 Tablespoons Cooking Oil
Cooking Steps
Bring water to a boil in a large pot. Add the noodles and cook according to the package instructions until just tender. Drain the noodles and set them aside.
Heat a little oil in a large pan or wok on medium heat. Crack the eggs into the pan and scramble them until fully cooked. Remove them from the pan and keep aside.
Add the remaining cooking oil to the same pan. Add the chopped garlic and sauté for a few seconds until fragrant.
Add the sliced onion, julienned carrot and sliced capsicum. Stir-fry the vegetables on medium-high heat until they are cooked but still slightly crisp.
Add the soy sauce, chili sauce and tomato ketchup. Mix everything well with the vegetables.
Add the cooked noodles and scrambled eggs to the pan. Toss everything gently until the noodles are evenly coated with the sauces.
Add salt and black pepper according to your taste. Mix well and cook for another 1–2 minutes.
